Mother's Salad


This isn't your normal "house salad". Whenever I order a house salad, I'm always disappointed with a plate of iceberg lettuce and a few shavings of carrots.
Beets, carrots, cucumber mushroom and organic greens- now that's a GOOD house salad

Family Veg Night

It was another night out for our family. Richard and I convinced my parents to try a new restaurant: Veggie Grill. Enjoy the pictures and feast with your eyes :)



Take a Spin-ach: Spinach salad with ginger papaya dressing



Bali Bliss- Tempeh burger and steamed Kale



Sante Fe Crispy Chickin' (My meal!! and I'm convinced it's the best)- crispy chickin breast with avocado and south west salsa.




Sweetheart fries with chipotle ranch (we all fought over these)



Don't be a chicken- grilled chickin breast sandwich.



As you might be able to tell, we all weigh 900 lbs now! It was worth it. (hehe) If you're ever near the UCI campus in California, try the Veggie Grill. These pictures are proof of great food.

Family Veg Night


Family night was at my place this week. It was a simple take out week. We ordered Macaroni Grill to-go. Pasta is a rare meal here. I prefer asian cuisine (most likely because I'm addicted to spicy food in a terrible way)




When I have pasta I prefer the thinner Capellini or Angel haired noodle. I ordered Angel hair pasta with pesto, fresh tomatoes and artichoke hearts. Most restaurants give too much food for me but I enjoy leftovers for lunch.


Now that we're stuffed onto the main event; my parents met Rufus.





Hamsters are nocturnal and he wasn't in a rush to wake up while they were over. I managed to get him to pop out for a second though.





After dinner was over and we were getting ready for bed is when Rufus really awoke. Great news! My parents brought Rufus a present: a ball for him to exercise in! He gave it a spin when they left and had a grand time bumping into all sorts of new objects.

The evening was full of food and fun as per usual :)

Family Veg Night




It seems that now-a-days John is the amazing Wednesday night chef. Personally, I'm thrilled (see evidence above). Yesterday it was a warming yellow curry with tofu, potatoes and cauliflower. Best part of the meal is the FRIED TOFU! My parents own a deep fryer. Not healthy, yet it's completely delicious (isn't that how it always goes hehe?).

My next kitchen toy will be a slow cooker. I have been coveting the deep fryer but that will lead me down a weight gaining road. Another Wednesday, another fabulous meal!

Family Veg Night




This week was a GREAT family veg night.
On the menu: fried tofu in an orange, ginger sauce. First off, my favorite way to eat most things is fried. I know, I know it's bad for me- I can't help it.
The tofu without the sauce was wonderful; then add the orange ginger goodness John whipped up and you have a meal fit for scarfing.

What would I ever do without family veg night?

Family Veg Night


This week we had fresh angel hair pasta with homemade pesto and fried eggplant. I haven't had pesto in months and it was just as delicious as I remembered.

Family Veg Night

Last night Richard and I ventured over to my parents house for our weekly Family Veg Night. On the menu tonight was:




Fried Plantains




Spinach and olive lasagna.

Honestly, I've never been a big fan of lasagna but I really like John's. It's odd but I'm going to say I like his because he doesn't use any Ricotta cheese (:P). Thanks for making it the way I like it John!

John has this cool toy. It's a gun that measures the temperature of whatever you point it at.

Mom made desert. She was inspired by the banana post so we had banana's in brown sugar and a touch of lime juice.

The picture really doesn't do the dessert justice.

Overall, it was a good way to start off the family veg night. I think I'm cooking next week. Any recipe ideas? My mom loves eggplant, and okra(but I'm not a big fan of it). I'm thinking Asian flavored. Any help would be awesome!
