My first class in school is officially OVER!
When I came home from my first class Richard had flowers waiting for me to congratulate me. Even better than that, he had a menu out for Thai food so I wouldn't have to cook for us. Celebratory Thai is the best that food. I ordered something new for the occasion- Rama with tofu. Rama is basically a peanut chili sauce with spinach and broccoli. It scored well in my book.
YAY- now I can attempt to have a life again.

Paella
Paella is a rice dish from Spain. It's also a dish that my family ate for family veg night :)
Our paella had leeks, celery, carrots, mushrooms and it was cooked in a vegetable broth. It was very flavorful and filling.
We didn't stop ourselves from splurging though.
This is a great dish for non-vegs. They'll probably say that they didn't even know anything was 'missing'.

Couscous
My first meal cooked this week is a couscous with red onion, garlic, corn, diced tomatoes and green beans for crunch.
I put a LOT of garlic in here because I like a lot of garlic and so does Richard. It turned out well. I've been getting tired of eating out and I'm trying to set goals for making more time to cook.

Week of Pictures
In the past week I've traveled to San Diego 2 times for 2 different weddings.
After wedding number one, I came home to bond with Rufus.
After wedding number two: we went to South Park and tried Big Kitchen. What a great family atmosphere breakfast. This place is definitely a hole in the wall and it's been around since the 60's. They have a vegan section of the menu as well as regular eats for your non-vegan friends.
The decor is a bunch of pictures/signatures that have been collected over the years
The Beatles and Teddy.
With full bellies Richard and I headed over to Julie's place downtown.
So I haven't taken any food pictures but next week I get a break from class and I'll finally have some time to COOK!

Artichoke Ravioli
I actually had time to make a meal last night! Boy have I missed cooking.
We had Artichoke Ravioli with a tomato, basil, red onion, garlic and mushroom sauce with a focaccia roll on the side.
I'm almost done with my first class and then I'll have the summer to relax before hitting the books hardcore in Fall.

Rambutan Results
A week ago I posted about my Freeze Dried Rambutan from Trader Joe's. I've finally gotten around to a taste test.
The results are disappointing to say the least. Trader Joe's, I'm sorry but Freeze Dried Rambutan are a BAD idea.
They are nothing like the actual fruit. They lack flavor and the wonderful texture of the original fruit (which I expected but in a MUCH worse way). I'm trying to figure out what I'll do with the rest of the bag. Maybe I'll find a creative way to dress them up and make them decent. Until that idea comes to me, they'll be sitting in my pantry.

Stuffed Poblano Pepper
I was at Trader Joe's, again (lord knows what I would do without that place right now!), surfing the frozen section and I spotted these stuffed peppers.
It was only natural to be skeptical of this new item, and I was, but I took the risk and purchased. Since going back to school and my hours at work increase beyond 40 a week semi-decent frozen meals are a necessity (this will change over the summer when I have a break in school- YAY).
On a scale of 1-10 I would rate this as 8. Pretty edible as far as frozen foods go. I heated mine in the oven and the rice used to soak up excess sauce was a must. I added a side of corn to this and our meal was complete.

Mother's Salad
This isn't your normal "house salad". Whenever I order a house salad, I'm always disappointed with a plate of iceberg lettuce and a few shavings of carrots.
Beets, carrots, cucumber mushroom and organic greens- now that's a GOOD house salad

Whole Soy Ice Cream
Chocolate and coffee are a match made in heaven. Turn this combo into a frozen treat and then make it vegan, now you have this ice cream.
I find that most soy ice creams have terrible texture and flavor. I long for creaminess and rich flavor.
WholeSoy pulled threw for me on this one. While I love it, I don't be purchasing it again soon, only because I'll eat a whole tub at a time! :)
