Spinach Ravioli



Last night decided to use up some stuff from our freezer and pantry.
This is Spinach Ravioli with roasted Japanese eggplant, sun dried tomatoes, and nutritional yeast "cheese" sauce.

Turned out really well.

I'm very happy with my new grill. I want to grill EVERYTHING :)

Yummy that sure does look good. What brand of spinach ravioli did you use- I have yet to find vegan ravioli?

Hey Teddy! I think you and I are living parallel lives. Ever since you've been working overtime, so have I! Freaky! By the time this week is over, I'll have in 71 working hours. Granted that's with 2 jobs, so I haven't been commenting much either. My full-time job has robbed me of 53 hours of my life. GRRR!! That will all change very soon.
Glad to see you're still cooking and eating great stuff. Your family night looks like it turned out great despite mishaps.
I hope I'm able to keep up with things better next week. If I don't see posts or comments from you, not to worry. I know what you're up to! Take it easy.

Way to go on using up old stuff. I'm still trying to get through all of mine! I hope that things slow down for you soon. Try not to wear yourself too thin with work.

thanks for commenting! The ravioli tonight wasn't vegan. But I've made my own before, the dough's not too hard to make and it's a lot of fun. I can help ya out with a recipe if you'd like! :)


Kleo and urban vegan- they were good but not vegan b/c i've been so busy with work.

Carrie! 71 hours! no way, that it too much I thought my 50+ hours was killing me. eekk!
