Sauteed Sweet Potato


This can be a simple side dish or can be added to your grains/one pot meal for extra pazzaz.

I used 1 sweet potato chopped in thin chunks, an onion, a whole mess of spices and topped it off with some fresh parsley (cilantro would work well too but I was out).

Suggested spices to use: Coriander, Paprika, Cumin and a tiny tiny pinch of cinnamon (b/c it can so easily over power everything)

Combine everything and sauté this mix in some oil on med to high heat for about 10 mins (if you leave the lid on it helps hold in moisture as well). This is another one of those dishes that sounds fancier than it is. I also get the hunch that using curry powder as your spice would create an appropriate and delish flavoring.

Still on my voting kick... hope you're as excited for election day as I am. I think I'll start planning my election meal tonight!

Grilling the summer away




Last night was my first class for school! I absolutely loved it although I am extremely tired today. More on that later because I never posted about the wonderful meals I had all weekend.

A week ago I saw an article on vegetarian summer grilling on MSN. They mentioned sweet potatoes and I've been on a mission to make them since. Everyone needs to try these because they are just too easy to make. If you can peel, boil water and turn on a grill you will master this dish (just be sure not to boil them too long or the potatoes will get mushy!)

Cut up the sweet potatoes, boil them for about 10 mins, drain and drizzle in maple syrup (optional) and place on your grill (about 3-5 mins on each side). I like to sprinkle with salt and pepper to give the dish more a little more depth.


Desperate hunger and a small budget always result in a hodgepodge of creativity for me. What resulted this time was oven baked potatoes drenched in olive oil and garlic with some kidney beans and green onion thrown in for the last few minutes. A true garlic masterpiece.

Chop new potatoes, coat them in olive oil and place on baking sheet in a 350 degree oven for 10-15 minutes or until tender. Add garlic, kidney beans and green onion and cook for an additional 5-10 mins.

Finally the best part- dessert. Grilled peaches soaked in vanilla and maple syrup on top of some vanilla ice cream. Just heavenly.

Sweet Potato Fries



Fried foods are UN-healthy but.... lucky for you, these are BAKED and they're sweet potato so tons of Vitamin A :)
Saturday night here and I'm doing nothing but relaxing and more importantly eating.
I usually have popcorn and movies but tonight I wanted something different. It was time to raid the fridge- ta dah! A new movie snack is born for me.
Behind the orange baked goodies is the rest of my dinner (I made sweet potato fries 2 times today lol- they were just so good the first time).
I had a Trader Joes Veggie Marsala patty- I'm a big fan but if you don't like Indian flavors, it's not for you.

Hope everyone is having a nice weekend, it's about time for me to get back to the movie :)

Family Veg Night




My mom found a recipe to try this week- orange bell pepper stuffed with sweet potatoes and onion with a simple salad on the side. The meal only took about 30 minutes to prepare. That's always a plus in my book. The faster I can eat a freshly prepared meal the better. :) Good picking mom!

I'm planning on heading down to San Diego this weekend and am thrilled about eating out there. San Diego has Mamma Testas, Ranchos, and my favorite Whole Foods. I'm looking forward to an appetizing weekend and hope you are too!
