Richard's Lunch

Yesterday Richard went down to San Diego for his first evening of school. It was my mission to pack him a lunch that he'd love.

Here's what I made:




Fennel, garlic, TVP, cherry tomatoes and a bunch of Italian parsley. Serve over rice and you've got yourself an explosion of Italian flavor.




For dessert, just a simple fruit salad. Mangoes, nectarine, strawberries, and watermelon. I packed some granola for him to sprinkle on top too.

Now I haven't an official review yet but I ate this for lunch yesterday too and it was surprisingly satisfying. (I'm hoping Richard thought so too!)

It's a three day weekend. YAY

Anyone have any special cooking planned for this weekend? A BBQ or Birthday?(I'll be making a cake for a bday next week)

I don't have any events for the holiday weekend but I'll likely be doing some baking... not sure exactly what I'll be baking, but I'm leaning towards the Carrot Raisin muffins from VwaV... If only my Vive Le Vegan book would come in to the bookstore so I could make something from that!

You are making changes around here, changes are good. Lunch looks good too. Three day weekend - it's just all good. :)

I dont' have anything more special than usual planned for this weekend, but if you want a killer chocolate cake with PB icing recipe let me know.

What a sweetheart you are. Richard's gotta be a happy camper with the food you made...

I haven't any big plans for cooking and i have to work so i won't be BBQing... hopefully my family or Peter's family will and i can join one or both!!!
