Banana nut Muffins
I made banana nut muffins for the first time ever yesterday. They turned out wonderful. I looked at about 5 recipes (vegan and non) and changed them to make one wonderful vegan recipe.
I like my muffin with texture so I put a lot of walnuts in them and I also added some flax seed (maybe they're SEMI healthy)
Does everyone like my heart muffin wrappers? I love them. Bought them 2 days after Valentines for dirt cheap at target.
I'll post the recipe later tonight (I don't have it with me here at work)

Those look wonderful! I like to make my banana nut bread with about twice the amount of walnuts called for in the recipe. I usually use whole wheat pastry flour when making cakes or quickbreads and replace half or more of the oil with applesauce, which does make it a little healthier. I love baking, probably more than I like cooking. Those little heart cups are so cute! I should really get a muffin tin so I can stop borrowing my neighbor’s. I want some mini cake and loaf pans too.
Awwwwwwwwww... loving little muffin cups. Very sweet. Speaking of that (or rather writing of that...) I *heart* Target. Such a great store. (I haven't been in a Wal-Mart in about 7 years and choose K-Mart/Sears after Target... and then there's Big Lots, but i digress!!)
Love the muffins. They look healthy to me! Of course i;m sometimes deluded enough in my sweet tooth frenzy that i could and WILL, darn it!!!, find nutrition somehow, somewhere in chocolate chip cookies...

Mmmm banana nut muffins....they look tasty. and i do like the heart muffin papers...who needs them only on V-day, i say!

Those muffins sure do look good and the muffin wrappers are super cute.
Sorry about the OT, that stinks. I've been pretty swamped this weekend and have stuff to post, but it might have to wait until later in the week.
BTW - Great pics from the pooch park. You said Central Park and it made me think of NYC.
