Spicy Basil Eggplant


11pm, I'm settling in for bed, reading some of my daily blogs, when I stumble on Happy Herbivores' Thai Spicy Basil Eggplant post.
Well, I've had some eggplants that are beginning to slowly die off in my vegetable drawer. Why not make this dish now?!
And that's what I did- tweaked a little, of course. An average person could say spicy and I know it's not spicy enough for me. Every dish must be (as Emeril may say) kicked up a notch.
I used a couple of squirts of Sriracha hot sauce and TONS of garlic. My spinach was screaming consume ME too. Thus a handful or two of that was added as well- besides, I like to see green in my dishes and the basil just wasn't enough.

The verdict- very spicy but just right for me. Although it did teach me the importance of using thai basil. That really does change the dish a bit. It's still good with regular basil but hands down it would be best with the thai basil.

Yum! I really don't eat enough eggplant. Like the blog! And I have tried the plain hempmilk, but not the chocolate. I've been eyeing it at Wild Oats though....will have to check it out.

Sadly, I don't live in Austin, but Dallas. I wish I lived in Austin-- they have such fun vegan places, such as Dhaba Joy, which has vegan baked goods AND soft-serve!

Looks and sounds delicious... thai basil is definitely it's own special something.... and I am with you about the spice.. the spicier the better!

Bianca- I'm a chocolate FIEND so I tried that one first and loved it, let me know what you think!

Veggiegirl- I only recently became addicted to spicy food, just last 4 years or so. It's amazing how my tolerance has gone up!

Sam- thanks for the add. I live near little Saigon in So Cal right now and I can usually find it but I was too lazy to go out and get some before cooking. Lol- I'm going to make it with the good stuff next time for sure!

Wheelers- Yea I know I'm MUCH more into spicy than most ppl so I would recommend toning it down a bit. If I was cooking for other people, I would tone it down but since I had no company I was free to spice it up! and believe me, I did

melody- That's why I think your recipes are awesome, you like the spice too!

Lina- I get teased for my love of food sometimes... but when my friends have a potluck and want dessert, who do they call?? haha- yep, they love me
