This pesto filled tortellini has been begging to be made for quite sometime now. After a quick trip to the produce store I was ready to make this tortellini's dreams come true :)
I created a sauce of cherry tomatoes, a bunch of fresh basil, sweet red onion, garlic and a splash of white wine. You simply sautée the onions and deglaze the pan with the wine. At the last minute I added the tomato basil and garlic.
Turned out quite well if I do say so myself!
