Beets




A couple of days ago I had a very odd craving- BEETS. This is odd for me because I don't recall ever eating beets as a kid, I think I've had them less than 5 times in my entire life actually.

Needless to say, I went to the market and got beets with their greens still attached.


My creation

I ended up making garlicy beet greens over organic polenta with roasted beets on the side. It satisfied my craving and gave me a pink mouth at the same time!

How do you prepare beets?

Blech! I haven't eaten beets in a very long time because the last time I did they were disgusting. I'm glad you enjoyed them though. I forget about polenta. I really should make it more often. It's so versatile.

Looks great! Beets are good comfort food I think. We like to roast them with other root veggies. Makes everything pink but they're so yummy!

Wow--I don't know if I have ever had fresh beets! The canned ones are disgusting, though... I should give them a try, roasted like you did.

I adore beets, fresh, roasted like yours, or even canned! I'm thinking I've juicing a beet soon, something that I've never done before.

I love beets, I just boil them like potatoes, then chop them and marinate them with garlic,olive oil and salt (for a few hours).
