Family Veg Night
This week John cooked for us. When I phoned to ask what we were having he said "I'm feeling something .... North African".
We had a 3 dish meal (take a peek):
Cous cous with dried apricots, golden raisins, pistachios and fresh pomegrante
Summer squash, zucchini, Chinese eggplant, mushrooms in a tomato lentil sauce
Dried figs, dates and apricots
This was my favorite meal thus far. What made it stand head over heals above the rest was that it is something new for me. I rarely eat couscous and this sweet yet savory combination was extremely satisfying. I think the whole family will be suggesting this one again.
Teddy
Since I've just discovered this North African cuisine, does anyone have any recipes I could try out?

I don't have any recipes, but that zucchini eggplant dish looks GREAT!
Wow... what a great looking meal. I love the couscous with pomegranate. I wish I had recipes to suggest--but I will probably be coming back here to get my ideas!
Looks delicious! I wish I had some other North African recipe ideas to share. Perhaps John will share his recipes!!!
Everything here looks wonderful and my kinda stuff too (minus the mushrooms). I love couscous. Do you remember my huge couscous kick almost a year ago? I went way overboard. I like your variation.
i Love cous cous! and yum on those figs, too. i love seeing what you eat on family veg night. teddy, i've moved - hope you'll update me & visit! :o)
Your N. African feast looks fab. Next, try a tagine--a sort of stew. North African desserts are killer/
John's meal looks good. I am finally able to have a bit o' blog time.. African meal.... Bryanna posted something called a bobotie... a family member of hers had afrcian ties and she made the meal for them. I didn;t make it, but i printed it off with intensions to try it.
