Roasted goodness

Here's some of what I made yesterday:

Roasted Pumkin (so far I've made pumpkin butter but I still have more)

Pumpkin seeds

Acorn squash

Roasted Acorn Soup with caramelized onions and roasted garlic (mom gave me that bowl)

What is your favorite vegetable/fruit to roast? Any recipes we should be trying?

It's not very original, but I love roasted potatoes with olive oil, lots of garlic and rosemary. I usually use red potatoes, but any will do.

Everything you roasted looks great!

I love almost anything roasted- nothing brings out the flavors more!
But my favorite is a dish we make with roasted leeks and brussels sprouts. Sometimes we throw some raisins in there.

Roasted veggies are my fav. I like any combination of garlic, carrots, celery, onions, red potatoes, sweet potatoes, mushrooms, and brussel sprouts usually tossed with olive oil, thyme, rosemary, and salt & pepper. Heaven!
