Roasted goodness
Here's some of what I made yesterday:
Roasted Pumkin (so far I've made pumpkin butter but I still have more)
Pumpkin seeds
Acorn squash
Roasted Acorn Soup with caramelized onions and roasted garlic (mom gave me that bowl)
What is your favorite vegetable/fruit to roast? Any recipes we should be trying?

all the nice fall food...yum. I recently roasted some mushrooms for soup and I really loved them.
I love almost anything roasted- nothing brings out the flavors more! But my favorite is a dish we make with roasted leeks and brussels sprouts. Sometimes we throw some raisins in there.
Roasted veggies are my fav. I like any combination of garlic, carrots, celery, onions, red potatoes, sweet potatoes, mushrooms, and brussel sprouts usually tossed with olive oil, thyme, rosemary, and salt & pepper. Heaven!

I recently roasted some mushrooms for soup and I really loved them.
Anything. Anything roasted. The last thing I roasted was Cauliflower.
