Rainbow Meal

Last week when I stopped by Little Saigon, they had okra on sale. 99 cents for a bunch.
I needed to use it ASAP before it went bad.



It's so colorful! Hence the 'rainbow' hehe

I just so happened to have some peppers that my mom had bought for me. Jambalaya sounded great but I didn't have all the ingredients. So, I made up my own .
It included Okra, Red and Yellow peppers, onion, kidney beans and cumin. FAR from Jambalaya but I don't know what to call it.




This will be lunch for tomorrow. By the looks I think we'll both enjoy it.

I like my okra one way- From a Restaurant! I've bought it and prepared in on my own about 3 times now and well, it hasn't turned out well at all. So until someone gives me an okra cooking tutorial, I'm gonna stick to the first and only Okra I've ever had (outside of my personal failures cooking it) from the Erritrean Restaurant.

I love your beautiful array of colors. Isn't it great how much fun veggies can be- and much more appealing than a hunk of greasy brown meat.

The last time I've had okra was when I spent a summer in Mississippi in Jr. High with a friend @ her grandparents' place. Mimi, Lora's grandma, would fry it up -- along with everything else! lol! :o) Your rainbow of food looks beautiful.

I've always been a little afraid of buying it because I don't know what to do with it!

i am not a fan of Okra. but i'm not opposed to it if someone cooks it for me right.

like the time Riad cooked eggplant and i acutally liked it...

orka - I want to like it. I'm hoping I've just never had it prepared in the right way. It's so cute.

I've only eaten it a few times and in the same way. Soup. I'm not sure what it was called, but it had a tomato base and had a few other veggies in it too. It was good, but I haven't had it in years.
Your rainbow looks very healthy and yummy!
