Garlicy Kale Potatoes


Recently I got Vegan with a Vengeance. (Mini celebration dance for me!) I really don't use cook books too much. I have this weird creativity thing when it comes to my cooking and I don't want to just cook from a book. But the inspiration from the cook books I've recently received is magnificent. I decided to read the entire book- page by page- before I even considered what I actually wanted to make.

I'm happy to say that this weekend I made some garlicy kale. Of course I had to make it my own by using roasted garlic and adding onion as well (I mixed it with some mashed potatoes as well)


There's some other stuff in the background that I made as well but the garlic potatoey kaley creation blew the other dishes away.

Oooh, looks like lots of kale has been cooked this weekend!! Lol! I recently made garlic-kale potatoes too and love it so much! Yours looks great. I want those bananas and chips too! Lol!

My favorite recipe book lately is Vegan with a Vengeance. It may not be the healthiest, but everything in it is SO good!!

vwav garlicky kale is my favorite kale recipe -- mixed with potatoes & i'd be all over it. sounds great! congrats on getting the cookbook -- you'll wonder how you managed without.

Reading the book first and then deciding what you might like to make in the future... that is a super cool idea and i'm glad it works for you. It might for me as well! I have quite a few recipe books but because i am a little (read: very) lazy, i hardly ever use them!

Nice garlic po's there... they look GREAT!

I'm so happy you got the cookbook - I've found it is really good and is my favorite at the moment.

What are those things with chocolate chips in the background? Looks like either bananas or marshmallows. Hmmm....

Hey there - I'm totally with you! I "browse" cookbooks while eating breakfast and then the food mulls around my head all day or all week and I'm inspired for dinner without working directly from the cookbook. anyway, that's my scoop.

Those potatoes looks great! I've never tried them with greens but maybe it's about time I do. I made a soup of a similar concept recently, actually!

I typically use cookbooks as guidelines/inspiration, or (most of) actual recipes if I'm trying something brand new/and or complex.
My favorites are VWAV as you mentioned and The Candle Cafe Cookbook.

Your garlicy kale mashed potatoes are the most kale-filled I've seen yet... and A LOT of people have been making them! They look great.

I use cookbooks but I'm like you and I improvise on most recipes.

Right now, my favorite is Mexican Everyday (think that's the name) by Rick Bayless. Surprisingly, it has a lot of veg options.

garlic+potatoes+kale = heaven

we eat ours with cooked carrot as well. makes it a pretty color. recently heard of using sweet potato and plan to try it. I like that you have a heavy kale content in yours!

i LOVE cookbooks. i read them all the time. i curl up with one every chance i get. most of mine are OLD, outdated, cheap, thrift store finds but they provide some interesting ideas. can't afford new ones. usually. just received my AWESOME deal, from Nava Atlas' website, of two cookbooks for $13.50 including shipping. i like the format of her vegetarian family cookbook and the new soup cookbook because it gives ideas for entire meals, sides, subs, quick breads, etc. i am sometimes very lacking in energy and creativity trying to feed my family of 7 and her cookbooks are a big help.
