Family Veg Night


Yes, things have settled down and we're getting back into the routine of Family Veg Night.

Mom found this simple recipe for a squash dish.

I snapped a picture while all the veggies were still firm and beautiful. After about 10 minutes all the flavors (and veggies) melted together.


The ingredients were few:
Yellow summer squash, cherry tomatoes, onions, garlic and some spices.

My verdict-
The taste was savory and satisfying but you may want some bread because it's not very filling.

summer squash is my favorite -- cool how you left them whole. i'll try that with the last from my garden.

Wow, that looks great. Simple and delicious! I would never have though to put the squash in whole like that! I didn't know they'd cook all the way through nicely. Looks great and I'll definitely try this one!!

Looks good, but I agree...needs something else breadlike - rice perhaps?

Don't let the meats on the menu freak you out (although they would to me), there are plenty of veg options. Good philosophy, anyway.

That looks like it would be good. I would definatley need bread or something else with it too, though!
Maybe even croutons.
