Indian Curry and Potatoes



Not much going on cooking wise right now

I have family coming in from England this week and I'm busy getting ready for that.

For dinner tonight we had baked potato and chickpea curry. I added some tomato and some green onions.
Simple, quick, my kind of meal
Nothing too special.

What is your fall-back easy meal to make?

Yum!! Teddy, this looks really great! I love those easy to make fall-back meals!

Mine is really easy, and my daughter loves it so we have it all the time. I just saute garlic and some oil, then toss in chickpeas. That's it! Lol! We have also added greens before, like swiss chard or spinach too. Takes 5 minutes, and it's totally easy! :P I add lemon juice to mine, or hot pepper flakes too.

Looks yummy, I like anything curry and can't go wrong with potatoes. We just had one of our quick-and-easy dinners last night, whole wheat pasta with veggies (this time we had onions, asparagus and broccoli) in tomato sauce. Sometimes we'll throw in some Morningstar "ground burger" or TJ's meatless meatballs. Simple and satisfying.

My fall-back easy meal... If I think ahead far enough to press a block of tofu, then I just sauté that in soy sauce, toss in nutritional yeast, and serve over steamed vegetables and brown rice. If not--green salad with chickpeas on top! If that's not easy, I don't know what is!

I have 2 fall back easy meals and both involve a lot of cheese - which is why I'm trying to cut down on them!

1.) Quesadillas with green onions, sour cream, salsa and monterey jack cheese

2.) Pizza with mozzarella (fresh), tomatoes, basil, and sauce.

Kinda the same thing if you think about it...bread, cheese, sauce, veggies. Oh well.

organic baked beans on toast, :p, or baked potato/sweet potato- cooked in the microwave with tomato sauce and chickpeas (any beans really) and loads of bby spinach, or kale :)

Aiyana loves hummus in spring rolls. d I love tomatoes, onions, and olives. I know I know Booooorrinnnng! :-)
i'll be glad when I purcahse a new camera I'm going through picture withdrawals! :-(

Often soup and bread from the freezer. I usually always have something in there I can thaw andheat for a fast fix. BUT, now I can can my own soups so I only have to take the bread out of the freezer.
