Warm Summer Salad

As I rummaged through the fridge tonight wondering what I was going to eat for dinner, I remembered all the great salad posts I had read recently.






This salad is Romane lettuce, Granny smith apples, whole pinto beans (I was out of chick peas) and dried cranberries.
I warmed the apples, beans and cranberries in the dressing I semi-made. Only for about 2-3 minutes tops. I added the romane last for about 1 minute. I didn't cook the tomatoes b/c I prefer the contrast between the warm salad and the cool tomatoes.


The real prize winner here is my semi-made dressing.








I like a creamy dressing- with less of the fat. I merely took my regular Ginger Based dressing and plopped it into the blender/food processor to make a creamy ginger-y dressing.


Walnuts would be a nice addition to this salad but I was out. A great 10 minute meal if I do say so myself. ; )

my meal tonight was a great burrito. you would have loved it.

beans, cheese, potatoes (tater tots), and lots of fresh avacado. oh and some Mama Testa salsa. mmmmmmmmm. delish.

I am glad we both had good meals :-)

That looks great! And sounds great. Gingery dressing with the cranberries (and walnuts if you'd had them) would be a wonderful taste combination.
