Artichoke Ravioli



I actually had time to make a meal last night! Boy have I missed cooking.

We had Artichoke Ravioli with a tomato, basil, red onion, garlic and mushroom sauce with a focaccia roll on the side.

I'm almost done with my first class and then I'll have the summer to relax before hitting the books hardcore in Fall.

Hey Teddy!! Like you, I seem to have less and less time to cook. But when I do, I really enjoy it. A lot of the meals I make lately are quick, weeknight meals. They taste OK and fill our bellies, but they're nowhere near some of the creations I see on other people's blogs. You & I seem to work a lot of hours. Now you're going to school??!! Wow! You must have boundless energy. What are you studying? I have to do Product Knowledge courses for my job, but I do that on my own time. I have 6 months to complete each Level. I can't imagine having to make the time to go to a classroom setting. Kudos to you!!

Looks yummy! Did you make the ravioli from scratch? Making your own pasta sounds good, but it also sounds like a lot of work.
