Mom had a great idea from Vegweb.com for our family dinner- use our slow cooker (crock pot). It was great because we all get there and we're hungry and tired from the long work day. Waiting around for a meal feels like forever when you're already hungry.
I came home to this!
The contents are artichoke hearts, tomatoes, eggplant, onions, bell peppers and spices.

Mom and I preferred to have ours with rice but John was just too hungry to wait and it smelled too good. John gobbled down a bunch before my mom and I even got to eat. No worries though, there was PLENTY to go around- I even got leftovers for lunch the next day!

Week two of veg night and it's going well. Next week is John's turn to cook and I can tell he can't wait.

Hooray for Family Veg Night. Crock pot food is sooooooooooo good and i love the way you can keep it on for hours when you're gone and it's ready when you are back and ready to chow down. i HAVE to get me a crock pot! This is great that you do this and the food looks grand!

I love your family veg night! I'm reminded that I want to try out my new crockpot -- I'd really like to open the lid & see something like this inside!
What a great idea! And that looks fabulous! Crock Pots are great in the summer since they don't heat up the kitchen.
I'll be curious to see what John makes too.
I always forget about that darned crockpot. It's perfect for this heat we've been having. Hmmm... Must do some internet searching for a recipe that catches my fancy.

Yum! Kinda like ratatouille. I love my crock pot and it is great to use when it is hot and you don't want to heat up the house with the oven on.
I strongly recomend "Fresh from the Vegetarian Slowcooker" for recipes!
